Why you must eat itWheat flour is washed to separate starch from gluten, then steamed into wide, cool sheets. Cut into strips, they are layered with gluten, bean sprouts, and cucumber, then dressed fast with chili oil, vinegar, garlic water, and salt. It is cold and slippery, sourness and heat taking turns on the tongue. The gluten is honeycombed and soaks up the sauce. Light for a summer noon, and a good palate-cleanser after paomo. The knife keeps cutting sheets at the counter.
Liangpi is a cold noodle loved across Shaanxi, and adding the washed-out gluten is one Xi'an way. The balance of chili oil and vinegar is each stall's signature. The heat can usually be adjusted, so ask for less if you are sensitive. Prices move with portion; confirm hours locally.
