Why you must eat itA steamed dumpling as big as a fist, its skin thin and chewy around a full stuffing of pork, tofu, glass noodles and garlic chives. Taken with the steam still rising from the basket, it seeps juice when torn open. Dip lightly in soy and vinegar and eat while hot. Rooted as a quick fill for market workers, they are eaten one after another, standing, straight from the steamer. Some shops offer kimchi or all-meat fillings, and it travels well as takeout. Unshowy, it is the honest bite that has carried Dongdaemun's busy mornings and evenings.
A staple of the dumpling shops around Dongdaemun market, sold fresh from steamers at the storefront. Besides the big mandu, many carry smaller steamed and pan-fried dumplings and kimchi buns. Open from early morning, with a steady stream of takeout.
