Why you must eat itWide noodles cut by knife are dropped into the same broth that cooked the chicken. They come thick and square-edged, releasing a scent of wheat as you chew. Some order it to close out the pot, others slurp a bowl on its own from the start. A little chopped scallion, coarse chilli and a drop of the table dip sharpen its outline.
