Why you must eat itA whole young chicken simmers in clear broth with scallion, rice cake and potato. While the tabletop pot comes to a slow boil, you mix your own dip from soy, vinegar, mustard and minced garlic. Eat the meat first, then the broth, and finish by dropping in kalguksu noodles or rice as the soup turns rich. The bone stock is clean rather than heavy, a warming bowl for a district that stays awake until morning. Sharing steam around one pot is the alley's real specialty.
