Why you must eat itA leavened wheat dough wrapped around brown sugar and pressed flat on a griddle. Once cooked, a slit is cut with scissors and packed with sunflower and pumpkin seeds and crushed nuts — that is the "seed hotteok." Bite in and the molten brown-sugar syrup runs out hot, so mind the first mouthful. Crisp outside, chewy within, the toasted seeds layered over the sugar's sweetness. In cold-season Myeongdong, a disc you find by following the steam.
Hotteok is a staple Korean winter snack. Once only brown sugar and cinnamon, the seed hotteok said to have started in Busan spread nationwide and grew popular at Myeongdong's stalls too. Rather than one fixed shop, choose the cart with people lined up at the griddle. It is a cold-weather food, and some stalls skip it in summer. Cash is the norm. It is handed over standing in a paper cup, hot, to gnaw at slowly as you walk.
