Why you must eat itWhite steam rises off big bamboo baskets, fist-sized dumplings lined up inside. The skin is thick, closer to soft bread when you bite. Inside, a dense filling of chopped glass noodles, pork, tofu and garlic chives. It is hot, so let the steam escape on the first bite. Less a burst of juice than the soft, unified warmth of the filling — a steamed mandu. Some carry a red kimchi filling, so order two and compare. A dish to eat standing by the stall rather than on the move.
Wang mandu is a staple of the takeaway stalls scattered along Myeongdong's streets. Rather than one fixed shop, follow the steam off the baskets. Being stalls, cash is safest. Price and filling vary a little by cart — kimchi, plain pork, even a sweet red-bean version. They open from late morning into the night, and the colder the season, the more you crave the steam. Many sign only in Korean, so showing the local script helps.
