Why you must eat itA faintly sweet batter poured into a boat-shaped mould, a whole egg cracked into the centre and baked. Out of the mould, it is a soft, sponge-cake base carrying a runny half-set yolk. A pinch of salt and black pepper sits on top, so sweet batter and savoury egg share the bite. It fits in your palm, gnawed from the end while hot. Among stall snacks its sweetness is restrained — just right for morning or a small hunger.
Gyeran-ppang, a Korean stall bread said to have been born in a university district in the 1980s, is now sold at stalls and in underground arcades nationwide, Myeongdong included. No fixed famous shop; pick the cart turning them out of the moulds one after another. A whole egg inside makes it substantial, filling for the price. Cash is the norm, handed over wrapped in paper, easy to eat walking. The base dries out as it cools, so eat it soon.
