Most stalls let you pick from "mild" to "very hot," and the hot one throws chili powder. The surface chars a little and turns fragrant; the inside stays juicy. A skewer in one hand and a drink in the other, walking, is a Myeongdong night classic. The sauce flecks your clothes, so eating still by the stall is the safe move.
Dak-kkochi is the skewer you see most often at Korean stalls. In Myeongdong the charcoal smoke rises all over the streets from evening into night. There is no set famous shop; choose by whether it is grilled to order or has a queue. The sauce, bought or house-made, differs slightly, and the heat depends on the cart. Cash is the norm, sold by the skewer. Many stay open late, and one is often eaten to close out a night of drinking.
