Why you must eat itA Susukino seafood izakaya whose signature is an ikura bowl they call "tsukko-meshi." A server holds the bowl and, to a chant, keeps pouring salmon roe until the rice disappears beneath it. The roe is from Hokkaido autumn salmon, its soy-cure saltiness loosened by the heat of the rice and bursting in the mouth. The show is loud, but the taste itself is left to the ingredient, almost plain. Order sashimi and grilled dishes, then arrive at this bowl to close — the rhythm is right.

Hachikyo is a seafood izakaya in Susukino, serving fish bought straight from fishermen around Hokkaido, Rausu and elsewhere. Its signature tsukko-meshi is known for the roe-piling performance done in front of the guest, spread by television and travellers' word of mouth. It runs at night only, and seats often fill with reservations. Besides the roe, seasonal sashimi and grilled atka mackerel line up. A lively room, a plate for settling in to drink and eat.
