Kushidori (Susukino)
×Pork Skewer (yakitori)
Why you must eat itIn Hokkaido, "yakitori" often means pork on the skewer, not chicken. Kushidori, which started in Sapporo, grills each skewer of pork or pork-and-leek over charcoal, and you choose sauce or salt. Order a few and add more to your appetite. It sits well before or after a bowl of miso ramen, and a dish of pickled daikon comes first here as a matter of course. In Susukino it works to open the drinking, or just before you close the night.
Kushidori is a skewer house that began in Sapporo in 1984 and has since spread across Hokkaido and beyond. Hokkaido's "yakitori" often means pork, and this shop makes a pork skewer its signature. It grills over charcoal and tops up its sauce as it goes. Several branches sit around Susukino and stay open late, easy to drop into mid-crawl. A plate you sit down to eat.
