Why you must eat itEven among Sapporo miso ramens, this is known as a bowl on the heavier side. A miso base sharpened with grated ginger and garlic meets a broth of pork bone and back fat, and thick curly noodles lift it well. Once you've ordered, take as many of the counter's quail eggs as you like — something to nibble while you wait. The film of fat on top traps the heat, so it stays warm to the end. On the edge of Susukino and open late, many choose it for a bowl after drinking.
Shingen is a miso-ramen shop that began near Sapporo and keeps several branches in the city. The Minami 6-jo shop sits on the edge of Susukino and runs until late. A thick miso soup, fat curly noodles and the counter's quail eggs mark it, and you buy a meal ticket from the machine. A small shop of counter and tables, it queues outside at busy hours. A bowl you sit down and slurp.
