Why you must eat itThe yellow curly noodles hold the miso broth well. Pork bone and kelp stock with Hokkaido rice-koji miso dissolved in, sweet and deep, the kind that stays with you. The boiled eggs on the counter you peel and eat yourself, something for the hands while you wait. The Yokocho shops are all narrow, your shoulder against the next diner's, and you slurp it down in the steam and the smell of garlic. Open late, it suits a bowl after drinking.

Ganso Sapporo Ramen Yokocho, begun in 1951 and taking its present shape in 1971, is a narrow alley held to be the birthplace of miso ramen. Among the dozen-odd shops crammed together, Shirakaba Sanso is one, known as a crowd-puller with a near-constant queue. Its miso is from Hokkaido, and its broth of pork bone and kelp comes with a boiled egg. The Yokocho sits in a corner of Susukino, its lamps lit until late.
