Why you must eat itMiso ramen is said to have been devised by this shop's first master, and the same bowl still comes from a corner of an Odori department store. Miso base dissolves into a pork-bone and vegetable broth, met with stir-fried bean sprouts and minced meat, medium-thick curly noodles sunk beneath. Ginger sits faintly behind it, the finish lighter than it looks. For all that it is the birthplace, the room is plain, and at noon local workers and travellers queue mixed together. Aji no Sanpei is a Sapporo ramen shop founded in 1948, known as the first to serve miso ramen. Its first master is said to have devised the miso version in the 1950s, which then spread nationwide as a Sapporo specialty. It sits on the fourth floor of the Daimaru Fujii Central in Odori and runs mainly at lunch. There is no ticket machine — a counter-and-table shop of the old kind. It closes on Mondays and such, so check before going. A bowl you sit down to eat.
