Why you must eat itJingisukan is mutton grilled and eaten on a round, helmet-shaped pan. Daruma uses unseasoned raw lamb, set on the crown of the heated pan to grill as its fat runs off. The cooked meat you dip through a sauce mixed with garlic and chilli before it reaches your mouth. In a narrow shop thick with the smell of mutton fat and charcoal, you face the meat under the smoke. The gaminess is less than you expect, and the flavour deepens the more you chew. It goes well with beer, or with rice to close.
Jingisukan is a Hokkaido regional dish of grilled mutton, and Daruma is an old house founded in 1954. On the edge of Susukino it keeps a main shop and a few branches, all narrow and old. The basic form is unseasoned raw lamb grilled over charcoal and eaten with a house-made sauce. A counter-centred shop, it brings out meat by the head as soon as you sit. Open from evening until late, it often draws a queue. A plate you sit down to eat.
