Why you must eat itSmall oysters are dropped into a batter of sweet-potato starch and set on a griddle with egg. The edges scorch and turn fragrant while the center stays soft and half-set. Penang o-chien is made a touch wet, eaten with a little chili paste. Break it from the scorched rim while it is hot. Take it fresh off the griddle at a seafront stall.
