Why you must eat itBeef tendon simmered for hours in white miso and mirin, served on skewers. Melting soft, the sweet miso clinging to the fat of the tendon, the scattered green onion tightening the finish. At a Jan-Jan Yokocho shop, it is usually ordered alongside kushikatsu. Portioned straight from the stewing pot, so drain it and eat it hot, skewer and all.

Yaekatsu, founded 1947, is a celebrated kushikatsu and dote-yaki house on Jan-Jan Yokocho (Nanyo-dori arcade). One of Shinsekai's longest-queuing shops, where nearly everyone orders the signature dote-yaki — beef tendon slow-stewed in miso. Closed Mondays, open midday to early evening. Counter and shared-table seating.
