Why you must eat itAt the mouth of Jan-Jan Yokocho, standing sushi formed by the chef before you. Three pieces to a plate is the base, with about forty kinds of neta. Cheap yet fresh — tuna, conger, silver-skinned fish shaped in quick succession. Order across the counter and pick each up by hand as it is formed. Turnover is fast, so even crowded the wait is short. A place to switch, with vinegared rice and raw fish, from the oil of the kushikatsu. Start with the silver-skinned fish.
Daiko Sushi, at the entrance to Shinsekai's Jan-Jan Yokocho, is known as a standing counter where the chef forms each piece. Three pieces to a plate, about forty year-round neta with daily specials. Prices are modest, and its character is keeping the fish fresh even when cheap. Locals and tourists mingle, and the queue holds from midday to evening. If you want sushi in Shinsekai, this is the first name that comes up.
