Why you must eat itA worker straddles a thick bamboo pole and presses the dough again and again with their weight. The resulting noodle is fine and springs against the teeth. It floats with wontons wrapping a whole shrimp in a clear broth of dried shrimp and pork bone. The noodle softens fast, so slurp it as it comes. A little red vinegar and chilli oil from the table sharpen it. Many choose the dry, tossed version instead. In a narrow Rua do Cunha shop, it is a bowl eaten quickly at a shared table.

Bamboo-pressed noodles come from an old method of beating the dough with a pole rather than a machine, carried from Guangdong to Macau and kept in Taipa. It is laborious, so shops are few, but the bite is said to differ. Prices and hours are a guide, and a sell-out can close them early. Check on site.
