Why you must eat itThin-fleshed water crabs are combined with meaty mud crabs and cooked into long-simmered rice congee. The water crab's liquid dissolves into the rice, and every grain takes on crab sweetness and the sea. The rice loses its shape and thickens to a slurry. It arrives in the pot; you crack the legs and sip the hot congee. Ginger, spring onion and white pepper usually finish it. Best split among two or more, sometimes closed with dipped fried dough. Near the mouth of Rua do Cunha you may see a queue.

Watery crab congee is known as a Taipa specialty, with dedicated shops clustered around Rua do Cunha. The water crab lends liquid rather than flesh to the rice and shifts with the season.
