Why you must eat itAgar drawn from seaweed is boiled down, flavoured with sugar, egg or fruit juice, and chilled to a set. Egg yellow or fruit colour sinks through the clear layers. It parts cleanly at the teeth, collapses cool in the mouth, and leaves only a light sweetness. Stalls cut it into squares on a plate, eaten with a pick or spoon. On a hot Taipa walk it cools you nicely. Some shops cut portions to take away.

Dai choi gou is a traditional Cantonese cool sweet made from agar, surviving in Taipa's dessert shops and stalls. It does not keep long even chilled, so it is mostly eaten the same day. Flavours — egg, mint, fruit — vary by shop. Prices and range are a guide, so check on site.
