Why you must eat itPastry is pressed into a mould, filled with custard, and baked in a fierce oven until the top blisters black. Straight from the tray the rim shatters in flakes while the centre still trembles, soft to the edge of liquid. Burnt caramel and egg spread through the mouth while hot. Outside the shops along Almeida Ribeiro people carry paper boxes and eat one or two standing up. Ask when the next tray is due and eat it warm.
Macau's egg tart is said to have grown from a Lisbon pastry an Englishman introduced, folded into local Cantonese habits. Charring the surface is considered the Macau way. Prices and baking times are only a guide and vary by shop. Queues and sell-outs happen, so check on the spot.
