Why you must eat itSeveral teas are poured back and forth through a cloth bag to draw out the tannin, then cut with evaporated milk. The bag stains the colour of a silk stocking, hence the name. It is strong, faintly bitter, with a milky weight at the end. Take it iced or hot, paired with a pork chop bun or a pineapple bun. At midday tables are shared and orders move fast. Slip in among the hurried and drink a single cup.
Silk-stocking milk tea spread from Hong Kong into Macau's cafés and is served all day in the old town. The blend and the pour are each shop's own, and the strength varies. Prices and hours are a guide. Seats can be scarce at peak, so come off-hour.
