Why you must eat itA bone-in pork chop is pounded, seasoned, then fried or griddled to order. The bun is a firm Portuguese roll; inside there is almost nothing but meat. No vegetables, no sauce — just the peppered chop against the toasted crust. Bite in and the juices soak the bread, fat sliding from the edge. At midday cafés many order it with an iced drink. Some shops make a limited batch and close early.
