Why you must eat itMalt sugar is looped and stretched again and again, dusted with white powder until it parts into a thousand fine threads, which then wrap crushed peanut, sesame and coconut. In the mouth the threads dissolve and only the filling and sweetness remain. At the stall the maker pulls the sugar in plain view and boxes each piece as it is folded. Fresh it is soft but fails in damp air, so it is best eaten there. Most buy a box and pick at it walking.
Dragon beard candy is said to descend from a court sweet and survives in Macau alongside its live stall-making. Damp hardens it, so it does not keep and is best eaten the same day. Prices and shelf life are a guide. Stall locations can shift day to day, so check on site.
