Why you must eat itHar gow wrapping a whole shrimp in near-translucent skin, and siu mai of coarsely cut pork and prawn, arrive in steaming bamboo baskets. The skin springs back to the fingers and gives up sweet shrimp and fat when bitten. Strong pu-erh sits on the table; from early morning older regulars spread out newspapers. Order basket by basket and eat each while hot. Come mid-morning before the rush and secure a seat.
Cantonese yum cha runs deep in Macau, and the old town keeps houses that open at dawn. Even a small party can order several plates; the trick is to take what is freshly steamed. Prices and hours are a guide, with rest days and early closings. Check the menu and times on site.
