Why you must eat itTanba is famed for fine chestnuts, and at Kyotanba's storefront they sell "yakipon," Tanba chestnuts roasted in a dedicated machine. A slit in the shell lets you peel and eat by hand. Fresh from the roaster they are hot and floury, the chestnut's own sweetness deep. Nothing is added, yet they are startlingly sweet. Take a paper bag and peel as you walk the market. Autumn is the season, but the shop roasts chestnuts year-round — a plate that tastes the ingredient's own power.

A chestnut specialist led by Tanba chestnuts, with its main shop around Fuyacho in Nishiki. Its famous "yakipon" is roasted under pressure in a dedicated machine, the shell scored for easy peeling. Sold fresh-roasted by weight at the counter, alongside black-bean tea and chestnut goods. The second floor is a tea room for taking chestnut sweets in calm. A shop devoted to chestnuts, in the Kyoto way that prizes the ingredient.
