Why you must eat itThey hand you a paper bag of about ten soy-milk doughnuts straight from the fryer. Bite-sized, light outside and moist within, the soy dough is never cloying and only lightly sweet, so they keep going down. The shop's soy-milk soft serve is popular too, the rich soy flavour carried straight into a cold swirl. Easy to nibble as you walk, with a distinctly Kyoto taste of soybean — a fixture of the Nishiki food walk.

A shop that renders Kyoto's tofu-and-yuba food culture into something you can eat on the go. Run by the Kyoto tofu maker Fujino, it fries soy-milk doughnuts at the storefront and serves soy soft serve. It is one of the newer specialities that caught on as Nishiki grew busy with visitors — an easy way in to ingredients like soy milk and yuba, in a single casual plate.
