Fuka Nishiki

×Nama-fu Manju

Why you must eat itNama-fu, fresh wheat gluten, is a Kyoto ingredient with a chewy, springy texture, and Fuka is known for turning it into a sweet — the nama-fu manju. Green-laver fresh gluten wraps smooth bean paste, bound in a bamboo leaf that lifts a fresh scent as you unwrap it. Often served chilled, its slippery bite and gently sweet paste suit summer. It keeps poorly, so eat it on the spot or the same day. Among Nishiki's sweets, one where the Kyoto ingredient stands out most.

The Nishiki branch of Fuka, an old house that once supplied wheat gluten to the Kyoto Imperial Palace, on the corner of Sakaimachi, dealing in fresh gluten handmade at the main shop. Its signature nama-fu manju wraps smooth bean paste in green-laver gluten bound with a bamboo leaf, with seasonal flavours at times. Fresh-gluten dengaku and the plain gluten are sold too. A quiet shop in the market, it lets you taste, as a sweet, the fu that underpins Kyoto cuisine.
