Why you must eat itIn Kyoto, pickles are both a companion to rice and a memory of taste itself. At Uchida's storefront, seasonal Kyoto pickles — senmaizuke, suguki, shibazuke, hinona — sit in tubs and dishes. They often offer a taste, so you choose after trying. The senmaizuke, thin-sliced Shogoin turnip cured with kombu, layers sweetness, a faint sourness and the umami of kelp.
