Izutsu Yatsuhashi

Why you must eat itNama-yatsuhashi is a Kyoto staple — a rice-flour dough scented with cinnamon, steamed soft. Izutsu's "Yuko" folds that dough into a triangle around chunky bean paste, chewy and fragrant with cinnamon. There are matcha and seasonal versions too. Unlike the baked kind, the fresh one is soft and short-lived, so eat one on the spot or buy it as a same-day souvenir.
An old yatsuhashi house said to date from 1805, with its flagship at the east end of Shijo Bridge in Gion. Its signature nama-yatsuhashi "Yuko" is named after the heroine of a novel set in Kyoto. Boxed souvenirs sit at the counter alongside single pieces to try. It makes both baked and fresh yatsuhashi, with shops at Kyoto Station and around the city.
