×Ginger Milk Curd

Why you must eat itFresh-pressed ginger juice is laid in the bottom of the bowl and warm sweet milk poured onto it in one fall from height. Left a few minutes, the ginger's enzyme sets the milk into a curd soft enough to stand a spoon. Break the surface and ginger rises with the steam; in the mouth milk-sweet and ginger-heat come by turns. Eaten hot, it is held to be a warming sweet. The "striking" pour gives it its name.

A milk dessert of the Pearl River Delta, said to set best with buffalo milk. How much ginger and how warm the milk changes the set, and each house has its own hand. Prices and hours are a guide. That it sometimes fails to set is taken as proof it is made by hand. Dongshankou's dessert shops open at night too, but check on the spot.
