Why you must eat itSeveral black teas are blended and strained again and again through a fine cloth sack. Stained by the tea, the cloth looks like a silk stocking, which gives the name. Evaporated milk lifts a deep milky sweetness beneath the astringency. Hot or iced, taken with pineapple bun or toast. The cafe table is usually shared — a cup drunk slowly between the paper and the talk.
A Hong Kong–style tea, a standard in Guangzhou's cafes and bingshi too. The labour of the cloth strain is said to decide the taste, and blends differ by house. Prices and hours are a guide; you can ask hot or iced, more or less sugar. Dongshankou has many cafes, some open morning to night. Names change, so check on the spot.
