×Pineapple Bun with Butter

Why you must eat itA round bun baked with a crackled sugar crust on top. There is no pineapple in it — the name comes from the split pattern of the crust. Fresh, it is halved and a thick cold slab of butter tucked in to melt a little on the heat. Crisp outside, warm and soft within, the salt of the butter meeting the sweet crust. Ordered with milk tea, it is the shape of a Dongshan morning. Takeaway is fine, but eat it warm.

The bingshi cafe culture of Hong Kong, taken root in old Dongshan, with pineapple bun and milk tea as the signature. On Dongshankou's mansion streets, old cafes mix with new. Prices and hours are a guide, and the warm ones appear at baking time. Weekends can mean a wait. Check on the spot.
