Why you must eat itIn a clear stock sit radish, konnyaku, beef tendon, mochi pouches, and egg, quietly steeping. At the stall you pick the pieces through the steam and have them set on a plate. A little mustard, and you eat the hot ones with care. The stock varies by stall in its balance of soy and kelp, some light enough to drink down. In the cold season seats fill fast, and it becomes a bowl that warms you in the river wind.
Oden is a stall staple, its contents shifting with season and shop. In Fukuoka there are local pieces such as beef tendon and gyoza rolls. The longer-simmered pieces hold more flavor, and late at night some run out. Prices are a per-piece guide; check the kinds and cost on the night's list.
