Why you must eat itBottled beer, shochu cut with water, or a highball is passed across the narrow counter. Ice and glass, the talk of the next guest, and the steam of pots and stock all run together. Shochu comes from barley or sweet potato, cut with water or hot water to taste. Nursing one drink slowly while picking at dishes is close to the manner of the stalls. The river wind chills a little, so some nights call for something warm.
At the stalls it is usual to order drink with food, and dropping in for a single glass may be discouraged. Shochu is widely drunk in Kyushu, with barley and sweet-potato labels on offer. With few seats, busy hours mean sharing tables or waiting. Prices and drink kinds are a guide; follow the local stall's ordering manner.
