Why you must eat itThumb-sized little dumplings are pan-fried together on the iron plate. The skins are thin, the seared side crisp, the filling modest with meat and vegetables. Eight to ten line a plate, carried to the mouth one after another with vinegar-soy or yuzu pepper. Being small they go quickly, often a plate before the close at the stalls. The searing sound and the smell of browning skin fill the air among guests at the narrow table.
Hitokuchi gyoza are the small dumplings that spread in Hakata, served at both stalls and specialist shops. Their thin skin and the ease of eating many are the point. Dips and condiments vary by shop. Cooking time and count per plate are a guide; check price and availability at the stall that night.
