Why you must eat itBoiled tonkotsu noodles are stir-fried on an iron plate, coated with a pork-bone tare and a little sauce. Pickled ginger, green onion, and pepper from the counter finish it. The noodle edges char and turn fragrant; it is served on a plate as a soupless ramen. Born at the stalls, it works as a closer or with drinks. The sound of the griddle and the smell of sauce rise around the tight seats. Many share it in small helpings.
Yaki ramen is said to have started at the Nakasu stalls and has survived as a line apart from soup ramen. Each stall blends its tare differently, so the same name is not one taste. Stalls sometimes close for weather. Prices are a guide; whether it is served and when the stall ends are best confirmed with the stall that night.
