Why you must eat itTranslucent liangfen — a cold jelly-noodle of pea or rice starch — dressed with chili oil, Sichuan pepper, aromatic vinegar and garlic. The name "heartbroken" is said to come either from crying at the heat or from Hakka homesickness. Smooth and easy down the throat, heat, sourness and numbness arriving together. A cold dish that goes down even in summer.

Shangxin liangfen is known from Luodai, a Hakka old town, and has a branch at Jinli too. The jelly comes white (pea) and yellow (rice), and the heat can usually be adjusted. A bowl between skewers and sweets clears the palate. Some shops really do bring tears, so if you're not strong with spice, ask for less.
