Why you must eat itA cook slams three glutinous-rice balls onto a brass plate, and the three cracks — pang, pang, pang — give sandapao its name. The balls roll through toasted soybean flour and are finished with brown-sugar syrup. Soft and chewy, plainly sweet. A fine break between spicy things, and a signature snack of Jinli.
Sandapao is an old Chengdu sweet, often made to order at the mouths of tourist spots like Jinli and Kuanzhai — the sound of the making is itself the draw. A former street snack, it holds nothing beyond brown-sugar syrup and bean flour. Served on a paper plate for walking, and easy on the wallet.
