Why you must eat itBalls of glutinous dough fried slowly in oil sweetened with brown sugar, swelling amber, rolled in sesame and threaded on a bamboo stick. Crisp outside, nearly hollow and light within; a bite gives the faintly bitter sweetness of the sugar. Sold three or four to a skewer, best while still hot from the oil.

Tangyou guozi is a fried sweet long sold on Chengdu street corners, and at Jinli stalls fry them to order. Similar snacks exist elsewhere, but the Chengdu version uses brown sugar — darker in colour, stronger in scent. It hardens as it cools, so eat it on the spot. A walking-snack standard.
