Why you must eat itEgg batter is griddled in a small brass pan; once one side puffs and colours, a filling goes on and it is folded in half. Choose sweet (brown sugar, red-bean, peanut) or savoury (minced pork, pickle, chili paste). The shell is sponge-light, the inside moist. Each is palm-sized and cooked one by one, so expect a short wait.

Danhonggao is a snack found only in Chengdu, said to date to the Qing. Heji, known near the Confucius Temple, is an old shop with more than twenty fillings. Jinli and street corners have stalls too, but a specialist edges them on taste and range. Ordering one sweet and one savoury to compare is the local pleasure.
