Jinli Bobo Ji

Why you must eat itPoached chicken and vegetables threaded on bamboo, steeped in a cold bowl of chili oil, Sichuan pepper and crushed peanuts. You take skewers from the earthen bowl and pay by the sticks you finish. Being a cold dish, the pepper's numbness and sesame scent stand out within the heat, lighter than hotpot. A fresher green-pepper (tengjiao) style exists too.
Bobo ji is originally a Leshan-area snack, sold widely at Chengdu's corners and old streets too. You can see what each stick holds, so pick at the counter and eat them steeped in the bowl. The heat can't be dialled back like an oil dish, but a green-pepper shop gives a lighter, numbness-led taste. Good for a few people to graze.
