Why you must eat itThe carts bunch up near the Tanao Road junction. There is one criterion: high flame and a moving wok. Whether the char comes through decides if it is the same dish at all. The tourist version, stirred slowly over a low flame, comes out soggy.

Pad thai is a national dish, but the gap between carts is enormous. Thipsamai later on this route is the old-house version wrapped in egg; this is the version eaten standing in the street. Getting both under the same name is the point of this walk.
