Why you must eat itNoodles fried in prawn oil, then sealed completely inside a thin omelette. Break it open and the steam carries the smell of prawn. Same name as the cart version back on Khao San, but a different noodle and a different construction. Open until 1am, so it works as a closer.
Founded 1966 and generally credited with inventing pad thai wrapped in egg. Michelin-listed. The Maha Chai flagship almost always has a queue, and its orange juice is a signature in its own right. Branches at Siam and Iconsiam.
