Why you must eat itA batter of ground rice and urad dal, fermented overnight, spread thin on a hot flat griddle. The edges crisp and lift, and it comes out like a large, thin crêpe. The faintly sour pancake arrives with coconut chutney and a warm soup of lentils and vegetables (sambar). Tear it by hand and dip it in the chutney or sambar. Beyond plain there is "masala thosai," wrapped around spiced potato, and a version with an egg dropped onto the batter. Many shops are vegetarian and use no meat. Thosai (dosa in North India) is a South Indian fermented-batter dish and a fixture of Singapore's Indian eateries. Little India has many all-day vegetarian houses, crowded in the morning for thosai and idli (steamed cakes). Because the batter is fermented, the sourness and thinness differ by shop.
