Why you must eat itLong-grained basmati cooked with saffron, clove and cinnamon, then steamed in layers with bone-in chicken or mutton. On the plate the rice is mottled yellow and white, a different spice rising with each mouthful. The bone-in meat slips free, spice soaked to its core. Sides of a sour curry (dhalcha), fried small fish and a hot pickle go on bit by bit to shift the taste. There is a good deal of it, so come properly hungry. The shop sits deep in Tekka Centre, packed at lunch with local regulars. Eaten sitting, by hand or spoon — a plate of scent.
Briyani is a Mughal-descended baked rice that took root in Singapore by way of South India and the Malay Peninsula. Allauddin's is known as an old briyani house in Tekka Centre, its name made on mutton briyani. It is a Muslim (halal) shop and uses no pork. The blend of spice and the tenderness of the meat are where a shop shows itself, and this one is praised for keeping the mutton clean of gaminess. They may close once sold out, and the range thins past lunch. Hours and closing days can change, so confirm on the spot.
