Why you must eat itKneaded wheat dough that the cook flings and stretches in the air into a thin sheet, folds and griddles. The surface crisps gold, the inside layered and softly airy. Roti prata is the South Indian flatbread (parotta) grown its own way in Singapore, called "roti canai" in Malaysia. Little India holds many specialists, the slap of dough never stopping from morning to late night. The dough is rested and stretched again and again, so there is sometimes a short wait before it cooks. Fresh off the griddle is everything — it stiffens as it sits.
