Why you must eat itYellow wheat noodles fried hard on the griddle in a sweet-hot tomato-based sauce. In go potato, fried tofu, greens and egg, and at some stalls scraps of mutton or extra spice. A squeeze of lime at the end draws the sweetness and heat tight. On the plate the noodles are reddened and glossy — sweet, hot and a touch sour, the mixed taste that belongs to this island. It is a Chinese noodle dish remade in their own way by Indian Muslims, using no pork. You can't hold it one-handed, so eat sitting. A good plate to change the mouth with a sweet-hot fry between heavily spiced dishes.
Mee goreng is Malay for "fried noodles," and in Singapore the version served by Indian-Muslim stalls (mamak) is the best known. Built on a Chinese fried noodle and remade to an Indian taste with tomato sauce and spice, it is mixing itself. Sweetness, heat and toppings differ widely by stall. Most are halal and use no pork, and some do a vegetarian version. An easy snack eaten morning to night. This stands for the area's plate rather than a named shop.
