Why you must eat itFlat, pleated fish cake (eomuk) threaded on a skewer and warmed in a clear anchovy broth. At the stall counter you take a skewer, first have the hot broth poured into a paper cup, and sip — it goes straight through you. The fish cake is soft, releasing the umami of fish and stock as you chew. A little soy dip works too. On a cold night, standing at a pojangmacha in a Hongdae lane, a skewer in hand and steam rising off the broth — that alone becomes a memory of winter Seoul.

A pojangmacha is a canopied Korean street cart. Serving odeng (fish cake), tteokbokki, sundae and fritters, by night it also becomes a stand-up spot for drink and snacks. In Hongdae they appear around the station and lanes from evening. Rather than one fixed cart, step into whichever is out that day. The fish cake is cheap by the skewer — one skewer and broth to take the edge off hunger. Cash is the norm. More common in winter, fewer in warm months. Hours and spots shift day to day, so the trick is to enjoy what is there.
