Why you must eat itA bowl of nothing but raw sea urchin and salmon roe over cooked rice. The urchin is Rebun or Rishiri ezo-bafun, used by the day's delivery and without alum, so it leaves only sweetness and melts. The roe stands taut, and bursts with a dashi-rich liquid when you bite. A little soy, or none at all, and it still holds. A bowl you meet only in the market's morning — dear in price, but one that stays with you.
Oiso is a seafood-bowl specialist inside Nijo Market, open from around half past seven in the morning. It leans hard on sea urchin, using bafun or murasaki urchin by region and season, and makes a point of raw urchin without additives. A small shop of counter and tables, its seats fill at breakfast. Set inside the market arcade, you can enter dry on a day of rain or snow. It usually closes on Wednesdays.
